Pork Chops Peas and Tomatoes

Its officially fall, not new news, but I have finally resigned to that fact in my own mind. Its colorful and this year they have been exceptional around my neck of the woods. Not only colorful but long lasting with beauty that has changed daily. We have a God who love to please His children and this year He has out done it in so many ways. 
I had good intentions today of giving my house a good deep cleaning but then Sweetman announced that on Monday we have a repair man coming to fix the ceilings in both bathrooms, (moisture spots ) and he will be creating a big mess, (taking off plaster) so even tho it is only Friday why should I clean if Monday it will be even worse than today??? Right?? I knew you would agree. Ok I did clean some but not the deep cleaning I wanted to do. That will happen after the repairs are done. 

So here's what I did do, played, "Pioneer Woman Cooks" you all know her I bet, and I hope she won't mind but she is a good teacher, and its raining. That makes me want to make something good and homey for dinner.  Plus # 2 daughter comes over for dinner on Fridays and she loves a good meal. Any how you see the cast of characters above, Pork chops, a can of diced tomatoes, and a can of peas. I'm also baking some potatoes and squash as side dishes. I love putting the juice from the casserole dish over the potatoes. 

Roast a couple of cloves of garlic in some olive oil and remove from the pan and set aside.

Season the chops with salt and pepper and sprinkle on some crushed bay leaves, get the pan really hot and brown the chops real good.



Dump in a can of tomatoes juice an all, and a can of peas juice and all, toss the roasted garlic back into the mix.


Cover the whole business and pop in a slow oven for about two hours, check it about mid way and if the juice is down add a small amount of water or broth. Bake your potatoes as usual or how ever you like them, I have made mashed potatoes to go with this as well, and like I said before the juice from the dish makes a great tasting topping spooned over the potatoes.
When I was a kid I didn't like the tomatoes or the peas but loved the flavor it gave the chops and it was something my mom made at least once a month because back then it was an inexpensive meal for a big family. She had alot more chops of course and a bigger pot.
