Slow cooking Thursday

I don't usually use the crock pot for making meals, simply because there is only two of us and crock pot recipes are larger portions. But our host SAHM has invited regular recipes as well so I will share this one that I recently tried and found very tasty. I love Greek meals and this is a great one...
LEMON GREEK CHICKEN
2 tsp. lemon zest
1/4 cup lemon juice
2 Tbsp olive oil
4 pressed garlic cloves
2-3 tsp dried oregano
3/4 tsp salt
1/8 tsp ground black pepper
2 med. baking potatoes
1 med. red bell pepper, cut into 1 inch pieces
1 med. red onion, cut into wedges
8 oz. fresh whole mushrooms
4 chicken breasts 2-3 lbs
Combine first seven ingredients in a bowl. Cut each potatos lengthwise into 8 wedges-place in 9x13. Add red peppers, onions, mushrooms and half lemon juice mixture. Place chicken on top of the vegetables. Brush remaining juice mixture over chicken with pastry brush. Bake 1 hour at 400 degrees or until chicken is no longer pink in center, and potatoes are soft. brushing chicken and vegetables with pan juices after 30 minutes. Serve with warm crusty bread Serves 4

Oh, That does look good. A friend and I go out to eat, and she loves the Greek chicken. My mother used to say I should marry a Greek, because I loved the food so.
